Lemon Ice Box Pie

I made this for Christmas Eve dessert. Its super easy and tastes and looks great!

2 egg yolks
1 can sweetened condensed milk
1/4 cup fresh lemon juice (3-4 lemons)
1 graham cracker crust
Cool Whip

1. Zest your lemons, reserve zest for later.  Cut one slice from the middle of the lemon and reserve for later.
2. Combine the egg yolks, milk, and lemon juice. Mix until well combined and light yellow in color.
3. Pour into graham cracker crust.  Refrigerate overnight.
4. Spread Cool Whip (about half of the container) evenly over the top of lemon mixture.  Sprinkle zest evenly over the top of Cool Whip. Twist lemon slice and place in the middle of the pie.
5. Keep refrigerated.
*Don't worry about the raw egg yolks in this dish, the lemon juice "cooks" them.
