Kmart 12/31

Stopped by Kmart today and checked out the Christmas clearance.  Here's what I got:

I needed cards for Christmas next year and I was just about out of tags also.  Husby just had to have the nerds and party poppers (to torment the furbabies).

Also, a picture of the cake I made today.  Rainbow chip with rainbow chip icing.  Its one of my favorites.  I thought you'd like to see it.



My stockpile

My stockpile seemed a lot bigger to me until I took pictures of it.  Some areas I need to focus more on: laundry products, cleaning products, and paper products.  I don't really stockpile food as its just me and husby, and i'm afraid we wont be able to eat it before it goes bad, but I think I am going to start stockpiling a little bit....maybe some canned goods and boxed items.

Frugal Tip of the Day

When you go to the drive thru and they chuck 57 ketchup packets into your bag, don't throw the ones you don't use away or put them in the misc drawer in your kitchen never to be seen again!  Squeeze them into your existing ketchup bottle.  Why waste perfectly good ketchup!?

Goals for 2012

So, its almost a new year, and I have a new set of goals!

1. Save $5,000.  This is going to be tough.  But I'm hoping by focusing more on being frugal and using coupons, I will be able to do this.

2.  Read 12 books.  I think this will be an easy goal to achieve.  I love to read.  I have my first book all picked out already that I got for Christmas.  I'll take a picture of it for you next year.

3. Lose 5 pounds.  Yes, just 5.  Do I need to lose more?  Yes, like 100x that much.  But, 5 pounds is a small, attainable goal.  I thought I could do small.

4. Menu plan/chore plan.  Need I say more?

5. Donate $500 worth of money or items to charity.  I like to donate to our local wildlife shelter (OWLS http://owlsonline.squarespace.com/ ), to the local homeless shelter/food pantry (http://rcsnewbern.com/), and to a local organization called PAWS that has a thrift store that they use to try and raise money for a no kill shelter.

I'll try and keep you all updated on how attaining my goals is coming throughout the next year.  What are your goals for the new year?

Frugal Tip of the Day

Buy produce in season.  It is cheaper and tastes better!

I stopped by Wal Mart to see if they had any good Christmas clearance.  They were pretty well picked over but I did get a good deal on Cranberry Frost Febreeze.  All of their Christmas merchandise is 50% right now.

Red Hots warm apple cider

I know apple cider is really not a frugal choice if purchased from a store.  I bought a gallon jug of it from Wal Mart for around $6 or $7.  Yikes!  But, for one time a year, a gal can splurge.  I like warm apple cider and husby likes cold apple cider. Lukily this recipe only take 2 liters so we both were able to use the same gallon of cider for our needs.  Now, on to the recipe.

2 quarts apple cider
1/2 cup Red Hots candies

1. Set crockpot setting to warm.
2. On the stove top, heat the apple cider and the red hots, mixing often, until the red hots have dissolved.
3. Once red hots have dissolved into the cider, transfer the cider to a warm crockpot to keep hot while serving.  Your cider will be a lovely brilliant red color.
*I made my apple cider Christmas Eve morning and had it in the crockpot until 8pm Christmas Eve night.  I just stirred it once in awhile.  It made the house smell great!



Fallen off the Bandwagon

I hope all of you had a wonderful Christmas.  Mine was very nice.  I made a good meal, which I will share pictures of at the bottom of this post, and perhaps a couple of recipes, and spent lots of time with family and friends.

I know my posting has been sporadic at best and I apologize.  I've fallen off of the frugal bandwagon.  Since Christmas is behind us now and a new year is approaching, I'm going to try to hop back on the frugal horse.  The plan as of now is to start posting menu plans again, grocery shopping trips, frugal tips and recipes.  My husband and I are really planning on buckling down in 2012 because we're sick of our living arrangement now and are in a hurry to buy a house.  With a 20% downpayment.  And i'm hoping we can save some extra money for some new furniture as well.

First we'll need to save for our emergency fund and pay off/down our debts.  Not including my car, I have roughly $5000 in debt (credit cards and medical bills).  I've not thought of the exact plan of attack for saving/paying down the debt other than just being as frugal as possible.  My husby and I are going to sit down and budget in the next few days and I think that will help immensely.

On to the Chrismtas Eve Dinner.  I made: spiral ham, mashed potatoes, rolls, copycat Cracker Barrel green beans, yams, deviled eggs, Red Hot hot apple cider, and Dutch apple pie.

Breakfast Rollups

I got this recipe from my friend Jenny.  She made them one morning when we were going on a shopping trip.  They're super easy, delicious, and rather cheap.  Perfect for busy mornings!

Egg beaters
Jimmy Dean sausage crumbles (or use sausage you cooked and crumbled yourself)
shredded cheddar cheese
whole wheat high fiber tortillas (or whatever kind you like)
salt and pepper

1. Cook up the egg beaters according to package directions.  Add salt and pepper to taste.
2. Once the egg beaters are mostly cooked through, add the sausage crumbles.  Cook until heated through and egg beaters are completely cooked.
3. Add amount of egg/sausage mixture you'd like to your tortilla.
4. Sprinkle with shredded cheddar cheese.
5. Roll up burrito style and enjoy!

Now, I like to premake the egg beater/sausage mixture over the weekend and keep in the fridge for the week.  That way I can assemble my burrito(s) in the morning before work, wrap in a paper towel, and microwave for 45 seconds.  Quickest breakfast ever!

I didn't really plan a CVS shopping trip over the weekend.  There just wasn't much I wanted but then I read on another money saving blog....i'm thinking probably http://www.moneysavingmom.com/ that CVS has where you buy three American Greeting cards and get back $3 ECBs.  Well, American Greetings has a $0.99 line of greeting cards which are included in this deal.  So I traipsed right on up to CVS and got my three $0.99 greeting cards, used $2.99 in ECBs and received my greeting cards free plus my $3 ECBs to use next time!  Just paid $0.20 for tax.  LOVE free cards since most of the time they just end up in the trash anyway :)

Ladies (and gents) today in the P&G coupon insert in the newspaper, there is a coupon for $8 off when you buy 2 Cover Girl face products.  Wal Mart has their Cover Girl Cheekers blush priced for $3.74 each.  So if you buy two of these blushes and use the coupon, your blush will be free, plus you will have some overage to put towards whatever other items you buy.  Here is my transaction today:

*If you ever find yourself with an abundance of onions, dice them and put them in a freezer bag.  That way they'll be ready to go next time you're using a recipe that calls for onions.

Crockpot Chili

This recipe makes a lot, but it freezes and reheats very well.  I recommend serving this with cornbread.


This is a picture of the chili right after I stirred everything into the crockpot.  Looks yummy already!

1 (29 oz) can tomato sauce
2 cups water
1 (29 oz) can dark red kidney beans (with liquid)
1 cup onion, diced
2 jalapeno peppers, diced
1 stalk of celery, diced
2 tomatoes, chopped
3 teaspoons cumin powder
3 tablespoons chili powder
1 1/2 teaspoons black pepper
2 teaspoons salt
brown sugar, a good sprinkling

1. Combine all ingredients in a large crockpot.
2. Cook on high 2 to 3 hours or simmer on low 6 to 8.

Suave Free Sample

I received this sample that I signed up for at Walmart.com in the mail the other day and this is what I received: Suave men's body wash, Suave sweet pea and violet lotion, Suave dry shampoo, and three Suave coupons!  This was a very nice sample.  I always love receiving little "treasures" in the mail.  These will go into a basket I keep of samples for when I have guests stay over, when we go on vacay, or when I've run out of a product I can use a sample to hold me over until I get to the store.  It pays to sign up for samples!

Garlic Green Beans (AKA Crack Beans)

Crack is whack ya'll, but these green beans are not!  These are my newest addiction.  These green beans are so delicious and so easy to make.  I never realized how cheap fresh green beans were, but for a handful to serve both me and husby it cost me about $0.65-$0.70.  Husby dubbed these "Crack Beans".

1 lb. fresh green beans (I just usually grab a nice fistful)
enough water to boil green beans (I dont measure, I just fill a pot full of water)
3 cloves minced garlic
3 tablespoons salted butter
dash of salt
dash of pepper

1. Add beans to a pot full of water and bring to a boil. Reduce heat and simmer for 10 minutes.
2. Drain the beans and set them aside.
3. In the same pot you used to boil the beans (minus the water of course), saute the garlic in the butter until the garlic is a nice light brown color.
4. Add green beans and salt and pepper to taste. Heat through.

Frugal Tip: The water you used to boil your green beans in would be good to use to water your indoor/outdoor plants once cooled.

Sorry I haven't posted in awhile ya'll, but we got hit with Hurricane Irene last weekend and i've just been too flustered this week to really worry about blogging.  Hopefully things will start getting back to normal.  Im hoping I can conjure up the energy today to head out to the grocery store.  We had to throw everything in our refrigerator and freezers away due to power outage caused by the storm so this will be a big grocery spending week.  Its inconvenient, but i'm not complaining.  It gave me the chance to really scrub down my freezers and refrigerator good.  Anywho, here is our menu for the week.

Checklist for Hard Times

A friend and I were on Facebook a couple of days ago discussing economy and being prepared.  I had initially complained because that particular day the DOW had gone down over 500 points and I was basically wondering why I'm even bothering contributing to a 401K.  We discussed being prepared in case the US dollar collapses and he sent me the link to this article "Checklist for Hard Times" by Terence Gillespie.  I believe some of the ideas of this article are a little extreme: i'm not going to have a DIY dental kit at home that includes extraction tools, mainly because i'd be too much of a baby to even use them.  But I found a lot of the other ideas helpful and hopefully you will too.  Notice: This article isn't meant to put fear in anyone or cause anyone not to contribute to our economy as a coworker of mine so accused me yesterday at work after she asked to see the article while I was discussing it with another coworker of mine.  Its just meant to help you be as prepared as possible.

Frugal Tip of the Day

Sign up to receive free samples!  Many websites offer free samples including Wal Mart and Target.  There are also many blogs out there that cater to letting you know when there is a free sample available.  I love getting free samples in the mail....its a surprise everytime I go to the mailbox!  Free samples are useful in many ways.  Not only do they let you try new products or products you've never used, but they can help you stretch your budget as well.  A lot of times the free samples will even come with valuable coupons.  For example, just this week I received a free sample from Crest.  Included was a travel size toothpaste, a travel size mouthwash, a small packet of dental floss, and coupons for all three of these items.  When I run out of my regular stockpiled toothpaste, I will use toothpaste samples.  These also come in handy when going on vacation.  I also use samples of products I receive to make welcome baskets when I have guests stay over.  They always appreciate this as you know when you travel you always forget something.  Samples aren't always small sized either, I've gotten many full size products as samples in the past.

Sorry its been so long since I've posted.  I wasn't sure I wanted to continue blogging since it doesn't seem as though anyone reads the blog.  But I thought about it and I decided I'd just keep doing it for myself. 
So today I decided to venture to hell, also known as Wal Mart, to do my grocery shopping.  Ive noticed that Food Lion's prices have really gotten ridiculous and Wal Mart has been carrying some more unique things that I like than Food Lion does.  Although I will have to watch the register more closely at Wal Mart as I noticed that the cashier charged me for one more apple snack that I did not purchase.  I will, however, continue to do my meat/poultry shopping at Food Lion as I feel that their meat is of better quality.  So this is what I bought today:

A new month, another shot at sticking with my grocery budget!  After consulting with a like minded frugal friend of mine, she suggested that if I could afford it, to up my grocery budget to $60/week since that includes food for me and husby, food and litter for the babies, HBA and home care products. I decided that she was probably right so my grocery budget per month is now $240. So far this week i'm over for my budget. But I did get Friskees on a really good deal and should have enough for the babies for the entire month (1 can everyday).  I also got a couple of cheap/free things to donate to the homeless shelter/food pantry.  Here's what I bought this week:

Nana's "Pink Stuff"

My Nana (who's 70th birthday would have been today!) used to make this recipe for Thanksgiving and Christmas.  I've not had it in a few years and decided it would be a good addition to today's bbq.  I apologize for the quality of the picture, i'm not the best photographer but I figure crappy pictures are better than no pictures!  Haha.


1 (21 oz.) can cherry pie filling
1 (14 oz.) can sweetened condensed milk
1 (20 oz.) can crushed pineapple, drained well
1 - 1 1/2 cups mini marshmallows
1 cup chopped pecans (optional) (I don't add these because I dont like nuts)
1 (12 oz.) container Cool Whip, thawed

1. Combine first five ingredients. Mix well.
2. Fold in Cool Whip until well incorporated.
3. Refrigerate for a few hours. Serve cold.

I've decided to really try sticking to a $50 grocery budget each week ($200/mo).  This will include toiletries, cleaning supplies and cat food.  I may have to bump it up to $60 due to the increases in food costs, but i'm going to stick with $50 first and see how that goes.  I didn't have to buy a whole lot at the grocery store this week.

3 Bean Salad

This is a great dish to take to potlucks or cookouts or for a nice light side to dinner.

1/2 cup apple cider vinegar
1/2 cup vegetable oil
3/4 cup sugar
1 teaspoon salt
1/2 teaspoon black pepper
15 oz. can cut green beans (drained)
15 oz. can wax beans (drained)
15 oz. can dark red kidney beans (drained and rinsed well)
1 green pepper (chopped)
1 white onion (chopped)

1. In a medium bowl, whisk together vinegar, oil, sugar, salt, and pepper.
2. Add in vegetables.  Stir, making sure to coat the vegetables well.
3. Cover and refrigerate overnight.

Frugal Tip of the Day

Buy generics or store brands if the name brands are not on sale or if you don't have a coupon.  A lot of times these are much cheaper than the name brand and taste just as good, in some cases, better!  Remember grocers always put the expensive name brand items at eye level, so look for those generics/store brands on higher or lower shelves.

Chocolate Chip Streusel Cake

Jayne's Beef Stroganoff

A co-worker of mine made this for my family when we were mourning the loss of my mother.  It is delicious!

1 pound round steak, beef tenderloin, or sirloin steak
2 tablespoons all purpose flour
1 (8 oz) carton sour cream
1/2 cup water
2 teaspoons instant beef bouillon granules
2 tablespoons margarine or butter
1 1/2 cups sliced fresh mushrooms
1/2 cup chopped onion
1 clove garlic, minced
2 cups hot, cooked egg noodles
pepper

1. Thinly slice beef into bite size strips.
2. Combine flour and sour cream.  Stir in bouillon granules, 1/2 cup water, and 1/4 teaspoon pepper. Set aside.
3. In a large skillet melt the margarine or butter over high heat and cook half of the meat until done. Remove. 4. Add remaining meat, mushrooms, onion and garlic. Cook and stir until meat is done and onion is tender.
5. Return all meat to the skillet.  Add the sour cream mixture. Cook and stir over medium heat until bubbly.  Cook and stir 1 minute more.
5. Server over warm egg noodles.

The deals kind of suck this week, but I love Russel Stover cream eggs and we were down to our last roll of paper towels.  Here's my transaction:

Ms. Zelda's Dip

After making this dip for so long, Ms. Zelda just eyes the ingredients so for some of these items there are not measurements.  Just add to your liking.

8 ounces shredded Mozzarella cheese
8 ounces shredded Cheddar cheese
1/4 to ½ pound pepperoni (may want to cut slices in half or fourths)
Red Peppers (I used the roasted kind in the jar, a few thinly sliced)
Ripe green olives (can use only green olives) (coarsely chopped)
Onion, diced small
Small can of mushrooms
2 cups Mayonnaise

1. Set oven to 350 degrees.
2. In a large bowl, combine all ingredients until well mixed.
3. Put in an 8x8 dish.
4. Bake until dip is bubbly and cheese is melted. Serve with crackers.

Rite Aid 3/29

I heard about an excellent greeting card deal at Rite Aid today so I just had to go check it out.  In their flyer this week is a coupon for $3/3 American Greeting cards.  Well, American Greeting has a $0.99 line of greeting cards.  So if you buy 3 of those and use the coupon for $3/3, you get them free!  You can't beat free!
Here is my transaction:

Pretzel Dippers

This would be something fun and easy to put in your children's lunch boxes.

8 oz. block cheddar cheese (I like to use mild) or whatever cheese you like
16 skinny pretzel rods

1. Cut the block of cheese into 16 cubes.

2. Let the cheese sit at room temperature for a few minutes.  Insert one end of the pretzel rod into the cheese cube.

3. You can serve these with honey mustard on the side for dipping.

I typically only go CVS'ing on Sundays, but today I stopped by there on my way home from work to see if they had restocked the Purex 3n1 sheets, they had not.  But, I did score some super good deals from their clearance baskets!  Here is what I got:
